I wouldn’t say that there is a substitute for spinach, but there are most definitely other leafy greens you can use, depending on your desired outcome. If you are simply trying to put together a salad, use a hearty mix of radiccio, arugula, Bibb, and Boston lettuces. These are nice, soft greens that will give a nice flavor mixture.
If you are looking for an application of spinach in pasta or a baked dish, go straight to the frozen, chopped spinach. These have already been cooked to and are considered safe in cooking applications. The frozen spinach also works wonderfully in dips!
